I cannot quite remember how we were introduced to the world of amazing cheeses. In particular we reach for Quebec cheeses, though Ontario also has some creative cheese-makers.

While more and more cheese-makers are competing for our dollar, the price of cheese is not going down. That expensive food commodity needs to be properly stored to maintain optimal taste and texture and to increase storage time.
